Octopus “all'acqua soja” (served in its own cooking water) with Strolghino di Culatello and Goji berries
Ingredients for 2 people - 1 kg of medium-sized octopuses

(by blog L’Omin di Panpepato) Procedure Clean the octopuses; cut the Strolghino salami into dices and fry them lightly in a large saucepan with the fennel seeds and a little oil. After a couple of minutes, add the octopuses, add the Goji berries, cover the saucepan and lower the heat. Let them simmer for 15-20 minutes, then use a fork to determine if they’re cooked. Let the octopuses cool down completely in the saucepan, then cut them into pieces. Serve them cold or hot in their cooking water with some bread croutons. |
